Instructions
- In a bowl, combine crab meat, celery, green onions, mayonnaise, Dijon mustard, salt, and pepper.
- Place a spoonful of the crab mixture onto an egg roll wrapper.
- Fold the wrapper according to package instructions, sealing the edges with water.
- Heat oil in a deep pan over medium heat.
- Fry the egg rolls until golden brown on all sides.
- For the lemon dip, mix lemon juice with a bit of mayonnaise and serve alongside the egg rolls.
Notes
Make sure to seal the egg rolls well to prevent filling from leaking during frying. For a spicy kick, consider adding jalapeño or hot sauce to the crab mixture.
