Ingredients

  • 2 tbsp finely chopped celery
  • 2 green onions, finely sliced
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • Egg roll wrappers
  • Oil for frying
  • Lemon juice (for dip)
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine crab meat, celery, green onions, mayonnaise, Dijon mustard, salt, and pepper.
  2. Place a spoonful of the crab mixture onto an egg roll wrapper.
  3. Fold the wrapper according to package instructions, sealing the edges with water.
  4. Heat oil in a deep pan over medium heat.
  5. Fry the egg rolls until golden brown on all sides.
  6. For the lemon dip, mix lemon juice with a bit of mayonnaise and serve alongside the egg rolls.

Notes

Make sure to seal the egg rolls well to prevent filling from leaking during frying. For a spicy kick, consider adding jalapeño or hot sauce to the crab mixture.
