Delightful appetizer with a crispy exterior and soft interior, combining sweet corn and savory crab, topped with chipotle lime dressing.


Ingredients

  • 1 1/2 cups fresh corn kernels (or thawed frozen)
  • 1/2 cup shredded potato (or pancake mix)
  • 1 egg
  • 1/4 cup flour
  • 1/4 tsp salt
  • 1/4 tsp smoked paprika
  • 1/2 tsp baking powder
  • Oil for frying
  • 1/2 cup lump crab meat
  • 2 tbsp mayo
  • 1 tbsp lime juice
  • 1 tsp chipotle in adobo, minced
  • 2 tbsp chopped green onions
  • Extra paprika & lime wedges for garnish

Instructions

  1. In a bowl, combine corn, shredded potato, egg, flour, salt, paprika, and baking powder to form a thick batter.
  2. Heat oil in a skillet. Drop spoonfuls of the batter and fry until golden and crispy on both sides. Drain on paper towels.
  3. In a small bowl, mix mayo, lime juice, and chipotle until smooth.
  4. Stack two fritters, top with crab, and drizzle with the chipotle sauce.
  5. Sprinkle with green onions, extra paprika, and serve with lime wedges.

Notes

For extra crunch, you can add breadcrumbs to the batter. Adjust the amount of chipotle in dressing based on spice preference.
