Description

A hearty and delicious sandwich combining tender chicken, crunchy vegetables, and a creamy sauce, all packed into a tasty baguette.


Ingredients

  • 2 chicken breasts, halved and pounded thin
  • 1 cup breadcrumbs
  • 1/4 cup flour
  • 1 egg, beaten
  • Salt & pepper, to taste
  • Oil for frying
  • 2 mini baguettes or sandwich rolls
  • 1/2 cup shredded red cabbage
  • 1/2 cup shredded napa cabbage
  • 1/3 cup julienned carrots
  • Fresh cilantro
  • Sliced jalapeños (optional)
  • Sesame seeds, for garnish
  • 1/4 cup mayonnaise
  • 1 tbsp sriracha or chili garlic sauce
  • 1 tsp lime juice

Instructions

  1. Dredge each chicken breast in flour, dip it in the beaten egg, and then coat it in breadcrumbs.
  2. Heat oil in a pan and fry the chicken until golden and crispy, about 3–4 minutes on each side. Drain the chicken on paper towels.
  3. In a small bowl, stir together mayonnaise, sriracha, and lime juice to make the sauce.
  4. Slice the baguettes and spread the sauce on each side. Layer in the crispy schnitzel, the cabbages, carrots, cilantro, and jalapeños if desired. Drizzle with more sauce.
  5. Sprinkle sesame seeds on top and serve while warm.

Notes

Pound the chicken evenly to ensure it cooks thoroughly and stays tender. Use freshly made breadcrumbs for better crunch.
