- 2 chicken breasts, halved and pounded thin
- 1 cup breadcrumbs
- 1/4 cup flour
- 1 egg, beaten
- Salt & pepper, to taste
- Oil for frying
- 2 mini baguettes or sandwich rolls
- 1/2 cup shredded red cabbage
- 1/2 cup shredded napa cabbage
- 1/3 cup julienned carrots
- Fresh cilantro
- Sliced jalapeños (optional)
- Sesame seeds, for garnish
- 1/4 cup mayonnaise
- 1 tbsp sriracha or chili garlic sauce
- 1 tsp lime juice
Instructions
- Dredge each chicken breast in flour, dip it in the beaten egg, and then coat it in breadcrumbs.
- Heat oil in a pan and fry the chicken until golden and crispy, about 3–4 minutes on each side. Drain the chicken on paper towels.
- In a small bowl, stir together mayonnaise, sriracha, and lime juice to make the sauce.
- Slice the baguettes and spread the sauce on each side. Layer in the crispy schnitzel, the cabbages, carrots, cilantro, and jalapeños if desired. Drizzle with more sauce.
- Sprinkle sesame seeds on top and serve while warm.
Notes
Pound the chicken evenly to ensure it cooks thoroughly and stays tender. Use freshly made breadcrumbs for better crunch.
