Delicious and nutritious patties made from chickpeas and shredded carrots, perfect for a meat-free meal.
Ingredients

- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup shredded carrots
- 1/4 cup finely chopped onion
- 2 garlic cloves, minced
- 1/4 cup fresh parsley or cilantro, chopped
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- 1/4 cup breadcrumbs (or oat flour for GF)
- 1 egg (or flax egg for vegan)
- Salt & pepper, to taste
- 2–3 tbsp olive oil, for pan-frying
- Lemon wedges for serving
- Greek yogurt or dairy-free dip for serving
- Extra chopped herbs (optional) for serving
Instructions
- In a bowl, mash chickpeas with a fork or potato masher, leaving some texture.
- Add shredded carrots, onion, garlic, herbs, spices, breadcrumbs, and egg. Mix until combined and sticky.
- Shape mixture into 8 small patties or 4 larger ones.
- Heat oil in a skillet over medium heat. Pan-fry patties for 3–4 minutes per side, until golden and crisp.
- Plate with lemon wedges and a dollop of yogurt dip. Garnish with fresh herbs.
Notes
For extra flavor, feel free to add your favorite spices to the mixture. If the mixture is too wet, add a little more breadcrumbs to help it hold together. To make these patties gluten-free, use oat flour or gluten-free breadcrumbs.
