Description

Delicious and nutritious patties made from chickpeas and shredded carrots, perfect for a meat-free meal.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup shredded carrots
  • 1/4 cup finely chopped onion
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 cup breadcrumbs (or oat flour for GF)
  • 1 egg (or flax egg for vegan)
  • Salt & pepper, to taste
  • 23 tbsp olive oil, for pan-frying
  • Lemon wedges for serving
  • Greek yogurt or dairy-free dip for serving
  • Extra chopped herbs (optional) for serving

Instructions

  1. In a bowl, mash chickpeas with a fork or potato masher, leaving some texture.
  2. Add shredded carrots, onion, garlic, herbs, spices, breadcrumbs, and egg. Mix until combined and sticky.
  3. Shape mixture into 8 small patties or 4 larger ones.
  4. Heat oil in a skillet over medium heat. Pan-fry patties for 3–4 minutes per side, until golden and crisp.
  5. Plate with lemon wedges and a dollop of yogurt dip. Garnish with fresh herbs.

Notes

For extra flavor, feel free to add your favorite spices to the mixture. If the mixture is too wet, add a little more breadcrumbs to help it hold together. To make these patties gluten-free, use oat flour or gluten-free breadcrumbs.
