Ingredients

- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup grated carrot
- 1/4 cup finely chopped onion
- 2 tablespoons chopped fresh parsley
- 1 clove garlic, minced
- 1 egg
Instructions
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
- Add the grated carrot, chopped onion, parsley, garlic, and egg to the bowl.
- Mix everything together until well combined.
- Form the mixture into patties.
- Heat a skillet over medium heat and add a bit of oil.
- Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- Serve warm.
Notes
Make sure to drain and rinse the chickpeas for the best texture. Feel free to add spices for extra flavor.
