- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 1/2 cup heavy cream
- 1 tbsp vanilla extract
- 1/4 cup sugar (for caramelized topping)
Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, mix the graham cracker crumbs and melted butter together. Press this mixture into the bottom of a greased 8-inch pan to form the crust.
- In a separate bowl, beat the softened cream cheese, sugar, eggs, heavy cream, and vanilla extract until you have a smooth mixture.
- Pour the cream cheese mixture over the crust in the pan. Bake in the oven for 45-50 minutes or until it is set.
- Once baked, let the cheesecake cool completely on a wire rack.
- Place the cheesecake in the refrigerator for at least 4 hours to chill.
- After chilling, sprinkle the 1/4 cup of sugar evenly over the top of the cheesecake. Using a torch, caramelize the sugar until it forms a hard, crackly layer.
- Let the sugar topping harden before slicing and serving.
Notes
For best results, allow cheesecake to sit at room temperature before slicing. Use a kitchen torch for caramelizing sugar, or broil cautiously if necessary.
