A delightful dessert that combines creamy cheesecake with a crispy, caramelized topping, perfect for special occasions.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 24 oz (680g) cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup heavy cream
  • 1 tablespoon cornstarch
  • 1/4 cup granulated sugar (for the cheesecake batter)
  • 1/4 cup granulated sugar (for topping)
  • Fresh berries (optional, for garnish)

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, combine the graham cracker crumbs and melted butter and press this mixture into the bottom of the prepared springform pan. Bake for 10 minutes, then let it cool.
  3. In a large bowl, beat the cream cheese until smooth. Add 1 cup of granulated sugar and mix well.
  4. Beat in the sour cream and vanilla extract. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the heavy cream and cornstarch until smooth.
  6. Pour the cheesecake batter over the cooled graham cracker crust and spread it evenly.
  7. Mix 1/4 cup granulated sugar and sprinkle it evenly over the cheesecake.
  8. Bake for 50-60 minutes or until the center is almost set.
  9. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour to cool.
  10. Refrigerate the cheesecake for at least 4 hours or overnight before carefully removing it from the pan.
  11. Before serving, sprinkle another 1/4 cup granulated sugar over the top and caramelize with a kitchen torch until golden brown and crispy.
  12. Optionally, serve with fresh berries for garnish.

Notes

Allow the cream cheese to sit at room temperature for a smoother batter. Ensure the cheesecake is cooled before adding the sugar topping. You can also broil it in the oven if you don’t have a kitchen torch.
