- 2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 24 oz (680g) cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/4 cup heavy cream
- 1 tablespoon cornstarch
- 1/4 cup granulated sugar (for the cheesecake batter)
- 1/4 cup granulated sugar (for topping)
- Fresh berries (optional, for garnish)
Instructions
- Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, combine the graham cracker crumbs and melted butter and press this mixture into the bottom of the prepared springform pan. Bake for 10 minutes, then let it cool.
- In a large bowl, beat the cream cheese until smooth. Add 1 cup of granulated sugar and mix well.
- Beat in the sour cream and vanilla extract. Add the eggs one at a time, mixing well after each addition.
- Mix in the heavy cream and cornstarch until smooth.
- Pour the cheesecake batter over the cooled graham cracker crust and spread it evenly.
- Mix 1/4 cup granulated sugar and sprinkle it evenly over the cheesecake.
- Bake for 50-60 minutes or until the center is almost set.
- Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour to cool.
- Refrigerate the cheesecake for at least 4 hours or overnight before carefully removing it from the pan.
- Before serving, sprinkle another 1/4 cup granulated sugar over the top and caramelize with a kitchen torch until golden brown and crispy.
- Optionally, serve with fresh berries for garnish.
Notes
Allow the cream cheese to sit at room temperature for a smoother batter. Ensure the cheesecake is cooled before adding the sugar topping. You can also broil it in the oven if you don’t have a kitchen torch.
