- 17.5 oz sugar cookie mix
- 3.5 oz instant French vanilla pudding mix
- 1/2 cup unsalted butter, melted
- 1 large egg
- 2 Tbsp light brown sugar
- 2 tsp vanilla extract
- 16 oz cream cheese, softened
- 1 large egg
- 3 large egg yolks
- 1/2 cup sour cream
- 1/2 cup granulated sugar
- 2 tsp vanilla extract
- 1/2 cup toffee bits
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with foil and spray with cooking spray.
- In a large bowl, mix all crust ingredients until a thick dough forms. Press into prepared pan and set aside.
- In the same bowl, beat cream cheese, egg, egg yolks, sour cream, granulated sugar, and vanilla until smooth.
- Pour cheesecake filling over crust and bake for 40-45 minutes until center is set.
- Sprinkle toffee bits over the bars immediately after removing from oven. Let cool for 30 minutes.
- Refrigerate for at least 3 hours before serving.

Ensure cream cheese is fully softened for a smooth filling. Optionally add toppings like chocolate or caramel drizzle.
