Ingredients

  • 17.5 oz sugar cookie mix
  • 3.5 oz instant French vanilla pudding mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 2 Tbsp light brown sugar
  • 2 tsp vanilla extract
  • 16 oz cream cheese, softened
  • 1 large egg
  • 3 large egg yolks
  • 1/2 cup sour cream
  • 1/2 cup granulated sugar
  • 2 tsp vanilla extract
  • 1/2 cup toffee bits

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with foil and spray with cooking spray.
  2. In a large bowl, mix all crust ingredients until a thick dough forms. Press into prepared pan and set aside.
  3. In the same bowl, beat cream cheese, egg, egg yolks, sour cream, granulated sugar, and vanilla until smooth.
  4. Pour cheesecake filling over crust and bake for 40-45 minutes until center is set.
  5. Sprinkle toffee bits over the bars immediately after removing from oven. Let cool for 30 minutes.
  6. Refrigerate for at least 3 hours before serving.

Ensure cream cheese is fully softened for a smooth filling. Optionally add toppings like chocolate or caramel drizzle.
