Ingredients

  • 4 salmon fillets (skin-on or skinless)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 2 cups fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon fresh parsley or basil (optional, for garnish)

Instructions

  1. Season the salmon fillets with salt and pepper. Heat the olive oil in a skillet over medium heat and sear the salmon for 4-5 minutes per side or until cooked through. Remove the salmon from the skillet and set aside.
  2. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Pour in the heavy cream and stir in the parmesan cheese and Italian seasoning. Simmer for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
  4. Toss in the spinach and cherry tomatoes. Cook for 2-3 minutes until the spinach wilts and the tomatoes soften.
  5. Return the salmon fillets to the skillet, spooning the creamy sauce over the top. Let everything simmer together for 1-2 minutes.
  6. Garnish with fresh parsley or basil and serve with rice, pasta, or crusty bread.

Notes

Be careful not to overcook the salmon; it should be flaky but still moist. You can adjust the thickness of the sauce by adding more or less heavy cream. Substitute fresh spinach with kale or arugula for a different flavor.
