- 4 salmon fillets (skin-on or skinless)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons butter
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 teaspoon dried Italian seasoning
- 2 cups fresh baby spinach
- 1 cup cherry tomatoes, halved
- 1 tablespoon fresh parsley or basil (optional, for garnish)
Instructions
- Season the salmon fillets with salt and pepper. Heat the olive oil in a skillet over medium heat and sear the salmon for 4-5 minutes per side or until cooked through. Remove the salmon from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream and stir in the parmesan cheese and Italian seasoning. Simmer for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
- Toss in the spinach and cherry tomatoes. Cook for 2-3 minutes until the spinach wilts and the tomatoes soften.
- Return the salmon fillets to the skillet, spooning the creamy sauce over the top. Let everything simmer together for 1-2 minutes.
- Garnish with fresh parsley or basil and serve with rice, pasta, or crusty bread.
Notes
Be careful not to overcook the salmon; it should be flaky but still moist. You can adjust the thickness of the sauce by adding more or less heavy cream. Substitute fresh spinach with kale or arugula for a different flavor.
