Ingredients

  • 1 chicken breast, butterflied and grilled or pan-seared
  • 1/2 cup cooked white rice
  • 1/4 cup heavy cream
  • 1 tbsp olive oil or butter
  • 1/4 cup mushrooms, sliced
  • 1/4 cup bell peppers (red & green), chopped
  • 2 tbsp sun-dried tomatoes (optional)
  • 1 garlic clove, minced
  • 1 tbsp grated parmesan cheese
  • Fresh parsley
  • Salt, pepper, paprika to taste

Instructions

  1. Season the chicken breast with salt, pepper, and paprika. Sear it in olive oil until golden and fully cooked.
  2. In the same pan, sauté the garlic, mushrooms, and peppers until softened. Add sun-dried tomatoes for extra flavor if desired.
  3. Pour in the heavy cream, stirring in the parmesan cheese until the sauce thickens.
  4. Let the sauce simmer until it integrates with the veggies.
  5. Serve the cooked rice on a plate, top with the creamy veggie sauce, and add sliced grilled chicken. Garnish with fresh parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a pan, adding a splash of cream if necessary.
