- 4–5 bone-in, skin-on chicken thighs
- 1 tbsp oil
- Salt & pepper, to taste
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup Arborio or short-grain rice
- 1 1/2 cups chicken broth
- 1/2 cup tomato sauce
- 1/2 cup heavy cream or coconut milk
- 1/2 cup cherry tomatoes, halved
- 1/3 cup green peas
- 1 avocado, sliced
- Fresh cilantro (for garnish)
Instructions
- Preheat the oven to 375°F (190°C). Season the chicken with salt, pepper, smoked paprika, and garlic powder. Sear the chicken skin-side down in an oven-safe skillet until golden brown. Flip and cook for 2 more minutes. Remove and set aside.
- In the same skillet, sauté onion and garlic until soft. Stir in rice, chicken broth, tomato sauce, and cream or coconut milk. Bring to a simmer.
- Nestle the seared chicken into the rice mixture. Sprinkle green peas and cherry tomatoes on top. Cover with foil and bake for 30 minutes.
- Uncover and bake for another 10–15 minutes until chicken is cooked and rice is tender.
- Garnish with avocado slices and cilantro before serving. Enjoy warm!
Notes
For extra flavor, marinate the chicken in spices before cooking. Substitute with other vegetables like spinach or bell peppers for variation.
