A deliciously creamy cheesecake with white chocolate and fresh strawberries, perfect for any occasion.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 500g (2 1/2 cups) cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 200g (7 oz) white chocolate, melted
- 2 large eggs
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 1 1/2 cups fresh strawberries, sliced
- 2 tbsp sugar
- 1 tbsp lemon juice
Instructions
- Preheat the oven to 325°F (165°C).
- In a bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
- Press this mixture into the bottom of a 9-inch springform pan to form a crust. Bake for 8-10 minutes, then let it cool.
- In a large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
- Add the vanilla extract and melted white chocolate, mixing until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream and heavy cream until the mixture is smooth.
- Pour the cheesecake batter over the cooled crust and spread it evenly.
- Bake the cheesecake for 50-60 minutes. The center should be set but still slightly jiggly.
- Once done, turn off the oven and let the cheesecake cool in the oven for 1 hour with the door slightly ajar.
- Transfer it to the fridge and chill for at least 4 hours, or overnight for the best results.
- In a small bowl, toss the sliced strawberries with sugar and lemon juice and let it sit for 30 minutes.
- Spoon the macerated strawberries over the chilled cheesecake just before serving.
- Slice your cheesecake and enjoy!
Notes
Store any leftover cheesecake in the fridge. Cover it well with plastic wrap or in an airtight container. The cheesecake lasts about 3-5 days in the refrigerator.
