A delightful dish that combines the richness of salmon with creamy spinach and shrimp stuffing, perfect for any occasion.


Ingredients

  • 2 large salmon fillets (skinless, about 6 oz each)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 cup fresh spinach (cooked and chopped)
  • 1/2 cup cooked shrimp (chopped)
  • 1/4 cup cream cheese
  • 1/4 cup grated parmesan cheese
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the chopped spinach, shrimp, cream cheese, parmesan, and lemon juice until well combined.
  3. Season the salmon fillets with olive oil, salt, pepper, smoked paprika, and garlic powder.
  4. Place the stuffing mixture on top of one salmon fillet and cover it with the other fillet.
  5. Bake for 20-25 minutes or until the salmon is cooked through and flaky.

Notes

Serve with a side of steamed vegetables or salad. You can also pair it with rice or quinoa for a complete meal.
