- 2 large salmon fillets (skinless, about 6 oz each)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 cup fresh spinach (cooked and chopped)
- 1/2 cup cooked shrimp (chopped)
- 1/4 cup cream cheese
- 1/4 cup grated parmesan cheese
- 1 tbsp lemon juice
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the chopped spinach, shrimp, cream cheese, parmesan, and lemon juice until well combined.
- Season the salmon fillets with olive oil, salt, pepper, smoked paprika, and garlic powder.
- Place the stuffing mixture on top of one salmon fillet and cover it with the other fillet.
- Bake for 20-25 minutes or until the salmon is cooked through and flaky.
Notes
Serve with a side of steamed vegetables or salad. You can also pair it with rice or quinoa for a complete meal.
