Creamy Spinach and Mushroom Lasagna

Description

A comforting dish featuring layers of lasagna noodles, spinach, mushrooms, and rich cheese – perfect for family dinners or meal prep.


Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 10 oz mushrooms, sliced
  • 10 oz fresh spinach, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
  3. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender.
  4. Stir in the chopped spinach, salt, black pepper, oregano, and basil. Cook until the spinach wilts down.
  5. In a baking dish, layer the spinach and mushroom mixture with lasagna noodles and ricotta cheese. Top with marinara sauce and mozzarella cheese.
  6. Repeat the layers and finish with mozzarella on top.
  7. Cover with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before slicing and serving.

Notes

Best served hot. Serve with a side salad or garlic bread for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
