Ingredients

- 2 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 10 oz mushrooms, sliced
- 10 oz fresh spinach, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
- Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender.
- Stir in the chopped spinach, salt, black pepper, oregano, and basil. Cook until the spinach wilts down.
- In a baking dish, layer the spinach and mushroom mixture with lasagna noodles and ricotta cheese. Top with marinara sauce and mozzarella cheese.
- Repeat the layers and finish with mozzarella on top.
- Cover with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before slicing and serving.
Notes
Best served hot. Serve with a side salad or garlic bread for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
