- 12 oz rotini pasta
- 1 lb cooked shrimp, peeled and deveined
- 1/2 cup diced red bell pepper
- 1/2 cup chopped celery
- 1/4 cup sliced green onions
- 3/4 cup mayonnaise
- 2 tablespoons sour cream
- 2 tablespoons lemon juice
- 2 teaspoons Dijon mustard
- 1 tablespoon fresh dill, chopped (plus extra for garnish)
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package directions. Drain and rinse under cold water. Set aside to cool.
- In a large bowl, whisk together the mayonnaise, sour cream, lemon juice, Dijon mustard, chopped dill, salt, and pepper until smooth.
- Add the cooled pasta, shrimp, red bell pepper, celery, and green onions to the bowl.
- Gently toss everything together until evenly coated in the dressing.
- Taste and adjust seasoning if necessary. Cover and refrigerate for at least 1 hour.
- Before serving, garnish with extra fresh dill and serve chilled.
Notes
Store leftovers in an airtight container in the refrigerator for 2-3 days. Stir before serving.
