A delightful salad that combines shrimp, rotini pasta, fresh vegetables, and a creamy dressing, perfect for warm days or gatherings.


Ingredients

  • 12 oz rotini pasta
  • 1 lb cooked shrimp, peeled and deveined
  • 1/2 cup diced red bell pepper
  • 1/2 cup chopped celery
  • 1/4 cup sliced green onions
  • 3/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 2 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • 1 tablespoon fresh dill, chopped (plus extra for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package directions. Drain and rinse under cold water. Set aside to cool.
  2. In a large bowl, whisk together the mayonnaise, sour cream, lemon juice, Dijon mustard, chopped dill, salt, and pepper until smooth.
  3. Add the cooled pasta, shrimp, red bell pepper, celery, and green onions to the bowl.
  4. Gently toss everything together until evenly coated in the dressing.
  5. Taste and adjust seasoning if necessary. Cover and refrigerate for at least 1 hour.
  6. Before serving, garnish with extra fresh dill and serve chilled.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Stir before serving.
