Ingredients

- 10–12 cooked shrimp, peeled and deveined
- 2 jammy boiled eggs, halved
- 1/2 avocado, diced
- 1/4 cucumber, diced
- 1 tbsp plain Greek yogurt or light mayo
- 1 tsp lemon juice
- Salt & cracked black pepper, to taste
- Optional: pinch of paprika or chili flakes
Instructions
- Mix together the diced avocado, cucumber, Greek yogurt (or mayo), and lemon juice in a bowl. Season with salt and pepper.
- Add the cooked shrimp to the bowl and gently toss until well coated.
- Boil the eggs for 6–7 minutes, then cool in ice water before peeling. Cut the eggs in halves.
- Scoop the creamy shrimp and avocado mix into a serving bowl, and arrange the jammy egg halves around the dish.
- Finish with a sprinkle of black pepper and a touch of chili flakes or paprika on top for added flavor.
Notes
Customize with your favorite ingredients like cherry tomatoes or feta cheese. Store leftovers in an airtight container in the refrigerator.
