Ingredients

- 3 potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 cups chicken broth
- 1 cup cream or milk
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is soft and translucent.
- Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat to a simmer. Cook until the potatoes are tender, about 15-20 minutes.
- Use an immersion blender to blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a regular blender in batches.
- Stir in the cream or milk. Season with salt and pepper to taste. Heat the soup gently before serving.
Notes
For added flavor, top with crispy bacon bits, shredded cheese, or fresh herbs like chives or parsley. Serve with warm bread or crackers.
