Instructions
- In a pan, heat oil over medium heat.
- Add the diced potatoes and sauté until they begin to soften.
- Stir in the curry spices and cook for a minute to release their fragrance.
- Add the green peas and coconut milk, and bring to a simmer.
- Cook until the potatoes are tender.
- Stir in the spinach or greens and cook until wilted.
- Season with salt and garnish with fresh herbs.
- Serve hot.
