- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 cup orzo pasta
- 2 cups chicken or veggie broth
- 1 cup milk (or cream for extra richness)
- 1 cup freshly grated Parmesan
- 1 1/2 cups fresh spinach
- Salt & black pepper, to taste
- Optional: red pepper flakes or sun-dried tomatoes for a kick
Instructions
- In a saucepan, heat the olive oil over medium heat. Sauté the minced garlic until fragrant, about 1 minute.
- Stir in the orzo pasta, toasting it for 1–2 minutes until slightly golden.
- Add the chicken or veggie broth and milk. Bring this mixture to a gentle simmer.
- Cook uncovered, stirring often, for about 10 minutes or until the orzo is tender.
- Stir in the grated Parmesan cheese until creamy. Then, add the fresh spinach and cook until just wilted.
- Season with salt and black pepper to taste. Serve hot, topped with extra shaved Parmesan if desired.
Notes
Stir the orzo frequently while cooking to prevent sticking. For extra creaminess, add more milk or cream. Can be customized with different veggies or proteins.
