Ingredients

  • 1 small onion (diced)
  • 2 medium carrots (peeled and diced)
  • 2 celery stalks (chopped)
  • 4 cups chicken broth (low sodium)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned.
  2. Add diced onion, carrots, and celery to the pot and sauté until softened.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the heavy cream and simmer for about 5 minutes.
