- 1 tbsp olive oil (if needed for cooking)
- 1 small onion (diced)
- 2 medium carrots (peeled and diced)
- 2 celery stalks (chopped)
- 4 cups chicken broth (low sodium)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned.
- Add diced onion, carrots, and celery to the pot and sauté until softened.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream and simmer for about 5 minutes.
- Add grated Parmesan cheese and mix until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
For a thicker soup, you can add more cream or a little flour. Add vegetables like spinach for extra nutrition.
