- 1 lb penne pasta
- 2 large chicken breasts, cubed
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper, to taste
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the penne pasta according to package directions, drain, and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add the cubed chicken and season with garlic powder, onion powder, paprika, salt, and pepper. Cook for 6-8 minutes, or until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the tomato paste and cook for another minute.
- Pour in the chicken broth and bring to a simmer. Once simmering, add the heavy cream and Parmesan cheese. Stir until the cheese is melted and the sauce is creamy.
- Return the chicken to the skillet and toss it in the creamy sauce. Cook for 2-3 more minutes.
- Add the cooked penne pasta to the skillet and toss everything together to combine. Serve with fresh parsley for garnish.
Notes
Make sure not to overcook the chicken to keep it juicy. Use freshly grated Parmesan cheese for the best flavor and creaminess.
