Creamy Mushroom and Spinach Stuffed Sweet Potatoes

Description

A delicious and healthy dish combining sweet potatoes with a rich filling of mushrooms and spinach, perfect for any occasion.


Ingredients

  • 2 large sweet potatoes, scrubbed
  • Pinch of salt
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 200g (7 oz) mushrooms, sliced (cremini or button)
  • 2 cups fresh spinach
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake for 45-60 minutes or until soft.
  3. Heat a skillet over medium heat and add the chopped onion. Sauté until translucent.
  4. Add the minced garlic and sliced mushrooms, cooking until mushrooms are tender.
  5. Stir in the spinach and cook until wilted.
  6. Remove from heat, mix in cream cheese and Parmesan cheese until creamy. Season with salt and black pepper.
  7. Once sweet potatoes are done, slice them open and gently mash the insides.
  8. Stuff the sweet potatoes with the mushroom and spinach mixture.
  9. Return to the oven for 10 minutes, then serve warm.

Notes

For extra flavor, consider adding herbs like thyme or oregano to the filling. You can use any type of cheese you like in the filling; mozzarella or goat cheese work well too.
