Ingredients

- 1 cup orzo pasta
- 1 tbsp olive oil or butter
- 8 oz mushrooms, sliced (cremini or button)
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1/2 tsp black pepper
- Salt, to taste
- 2 cups baby spinach
Instructions
- In a skillet, heat oil and sauté mushrooms until golden.
- Add garlic and cook for 1 minute more.
- Stir in dry orzo and toast lightly for 1 minute.
- Pour in vegetable broth. Simmer, stirring often, for 8-10 minutes until orzo is tender and liquid is mostly absorbed.
- Add cream, pepper, and salt. Stir in spinach until wilted and sauce is thick and glossy.
- Spoon into bowls and enjoy warm.
Notes
Pairs well with a side salad or crusty bread. For added flavor, sprinkle grated Parmesan cheese on top.
