  • 1 pound linguine pasta
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons olive oil
  • 1 yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon chopped fresh oregano

Instructions

  1. Cook the linguine according to package directions. Drain and set aside, reserving about 1 cup of pasta water.
  2. While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain off any excess grease.
  3. Add chopped onion to the skillet. Cook until softened, about 5 minutes. Then add minced garlic, Cajun seasoning, smoked paprika, salt, and pepper. Cook for 1 more minute, until fragrant.
  4. Pour in chicken broth and bring to a simmer. Cook for 10 minutes, allowing the sauce to reduce slightly.
  5. Stir in heavy cream, Parmesan cheese, and mozzarella cheese. Cook until melted and the sauce is smooth and creamy.
  6. Add cooked linguine to the skillet and toss to coat. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
  7. Serve immediately, garnished with fresh chives and oregano.

Notes

For extra flavor, top with more Parmesan cheese and fresh herbs. Pair with a side salad or garlic bread.
