Ingredients

  • 12 oz cheese tortellini (fresh or frozen)
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 cups broccoli florets (steamed or cooked)
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chicken pieces and season with salt, pepper, and Italian seasoning. Cook for 6-8 minutes, until the chicken is cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
  5. Pour in heavy cream and chicken broth, stirring to combine. Let the sauce simmer for 3-4 minutes until it begins to thicken.
  6. Add Parmesan cheese, stirring until melted and the sauce becomes creamy.
  7. Add cooked tortellini, chicken, and broccoli to the sauce. Toss to coat everything in the creamy sauce.
  8. Serve hot, garnished with freshly chopped parsley.

Notes

For a lighter version, substitute half-and-half for the heavy cream. This dish can also be made vegetarian by eliminating the chicken and adding more vegetables.
