- 12 oz cheese tortellini (fresh or frozen)
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- 2 cups broccoli florets (steamed or cooked)
- Salt and pepper, to taste
- 1 teaspoon Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the tortellini according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add chicken pieces and season with salt, pepper, and Italian seasoning. Cook for 6-8 minutes, until the chicken is cooked through. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
- Pour in heavy cream and chicken broth, stirring to combine. Let the sauce simmer for 3-4 minutes until it begins to thicken.
- Add Parmesan cheese, stirring until melted and the sauce becomes creamy.
- Add cooked tortellini, chicken, and broccoli to the sauce. Toss to coat everything in the creamy sauce.
- Serve hot, garnished with freshly chopped parsley.
Notes
For a lighter version, substitute half-and-half for the heavy cream. This dish can also be made vegetarian by eliminating the chicken and adding more vegetables.
