A delicious and comforting one-bowl meal combining tender chicken, fresh veggies, and a rich, creamy garlic sauce.
Ingredients

- 1 lb boneless, skinless chicken thighs or breasts, chopped
- 2 cups broccoli florets
- 1/2 cup diced carrots
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup light cream or half & half
- 1/4 cup shredded cheese (cheddar or mozzarella)
- 1 tbsp fresh parsley, chopped
- Salt, pepper, and paprika to taste
Instructions
- Season the chicken with salt, pepper, and paprika. Cook it in olive oil over medium-high heat until it turns golden and is cooked through.
- In the same pan, reduce the heat and add the minced garlic. Cook until fragrant, then stir in the cream and cheese. Let everything melt together into a creamy sauce. Toss the chicken back in to coat it well.
- Steam the broccoli and carrots until just tender, or sauté in a splash of olive oil.
- In a large bowl, spoon the creamy garlic chicken on one side and pile the veggies next to it.
- Sprinkle with chopped parsley and serve hot.
Notes
Use a meat thermometer to ensure the chicken is fully cooked. Feel free to add other vegetables or substitute chicken with cubed tofu for a vegetarian option.
