Creamy Garlic Chicken & Veggie Bowl

Description

A delicious and comforting one-bowl meal combining tender chicken, fresh veggies, and a rich, creamy garlic sauce.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, chopped
  • 2 cups broccoli florets
  • 1/2 cup diced carrots
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup light cream or half & half
  • 1/4 cup shredded cheese (cheddar or mozzarella)
  • 1 tbsp fresh parsley, chopped
  • Salt, pepper, and paprika to taste

Instructions

  1. Season the chicken with salt, pepper, and paprika. Cook it in olive oil over medium-high heat until it turns golden and is cooked through.
  2. In the same pan, reduce the heat and add the minced garlic. Cook until fragrant, then stir in the cream and cheese. Let everything melt together into a creamy sauce. Toss the chicken back in to coat it well.
  3. Steam the broccoli and carrots until just tender, or sauté in a splash of olive oil.
  4. In a large bowl, spoon the creamy garlic chicken on one side and pile the veggies next to it.
  5. Sprinkle with chopped parsley and serve hot.

Notes

Use a meat thermometer to ensure the chicken is fully cooked. Feel free to add other vegetables or substitute chicken with cubed tofu for a vegetarian option.
