A delicious and comforting dish featuring tender chicken breasts in creamy garlic sauce paired with crispy roasted baby potatoes.


Ingredients

  • 3 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • Salt & black pepper, to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Dijon mustard (optional)
  • 1 tsp dried Italian herbs or chopped fresh parsley
  • 1 lb baby potatoes, halved
  • 1/2 tsp garlic powder
  • Fresh chopped parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Toss baby potatoes with 1 tbsp olive oil, garlic powder, salt, and pepper. Roast for 25–30 minutes until golden and crispy.
  2. Season chicken with salt and pepper. In a large skillet, heat 1 tbsp oil over medium-high. Sear chicken on both sides until golden and cooked through (internal temp: 165°F/74°C). Set aside.
  3. In the same pan, sauté minced garlic for 1 minute. Pour in cream, broth, and Parmesan. Stir in Dijon and herbs. Simmer until thickened.
  4. Return chicken to pan and spoon sauce over. Simmer for 2–3 minutes.
  5. Plate with roasted baby potatoes and garnish with fresh parsley.

Notes

Don’t overcook the chicken to avoid dryness. Customize the sauce with your favorite herbs.
