Ingredients

- 12 oz spaghetti
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup shredded mozzarella
- 1/2 cup grated parmesan
- 1/2 cup shredded fontina
- 1/4 cup crumbled gorgonzola (or blue cheese)
- Salt & black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Boil spaghetti until al dente. Drain and reserve 1/2 cup of pasta water.
- In a large skillet, melt the butter and sauté the minced garlic until fragrant, about 1 minute.
- Pour in the heavy cream and bring it to a gentle simmer. Add the cheeses, stirring until they melt and the sauce is smooth.
- Toss in the cooked spaghetti. Add pasta water as needed to loosen the sauce. Season with salt and pepper to taste.
- Garnish with chopped parsley and a sprinkle of black pepper. Serve warm.
Notes
Don’t overcook the pasta; cook it al dente. Adjust the cheese types based on your preference. Add red pepper flakes for a bit of heat.
