- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 jalapeño, diced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 2 cups chicken broth
- 1 cup cooked chicken, shredded
- 1 cup corn
- 1 cup diced tomatoes
- 1 cup heavy cream
- Salt and pepper to taste
- Tortilla strips for garnish
- Chopped cilantro for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until soft.
- Add minced garlic and diced jalapeño, cooking for an additional minute.
- Stir in chili powder, cumin, and paprika, cooking for another minute until fragrant.
- Add chicken broth, shredded chicken, corn, and diced tomatoes. Bring to a boil, then reduce heat to simmer for about 20 minutes.
- Stir in heavy cream and season with salt and pepper.
- Serve hot, garnished with tortilla strips and chopped cilantro.
Notes
For a quicker preparation, use rotisserie chicken. Adjust spices to your taste, and substitute heavy cream with Greek yogurt for a healthier version.
