Ingredients

  • 2 chicken breasts, cut into chunks
  • 1/2 cup heavy cream or half-and-half
  • 1 tbsp olive oil or butter
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 cup cooked white rice (basmati or jasmine)
  • 1/2 cup steamed carrots
  • 1/4 cup cooked green peas
  • 1/4 cup cooked green beans or extra peas
  • Optional: chopped parsley for garnish

Instructions

  1. Season the chicken with salt, pepper, garlic powder, and paprika. Sear in olive oil until golden brown.
  2. Reduce heat and stir in the heavy cream. Let it simmer until thickened.
  3. Cook the white rice until fluffy while the sauce simmers.
  4. Lightly steam the carrots, peas, and green beans until tender.
  5. Plate the rice, spoon on the creamy chicken, and serve the veggies on the side. Garnish with parsley if desired.

Notes

For extra flavor, consider adding grated Parmesan cheese to the sauce. Use any combination of your favorite veggies for variety.
