- 2 tbsp olive oil
- 1 lb boneless skinless chicken breast, cut into chunks
- 2 cups fresh spinach
- 1 1/2 cups sliced mushrooms
- 2 cloves garlic, minced
- 1 tbsp butter
- 2 tbsp flour
- 1 1/2 cups milk
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat.
- Add the chicken chunks to the skillet and cook until browned, about 5-7 minutes.
- Stir in the garlic, mushrooms, and spinach, cooking until the spinach wilts.
- In another pan, melt the butter, then stir in the flour to create a roux.
- Gradually whisk in the milk and heavy cream, cooking until the mixture thickens.
- Combine the chicken mixture with the cream sauce and pour it into a baking dish.
- Bake in the oven for 20-25 minutes, until bubbly and golden.
Notes
Don’t overcook the chicken while browning, as it will continue cooking in the oven. You can substitute heavy cream with additional milk for a lower-calorie version.
