Ingredients

  • 2 tbsp olive oil
  • 1 lb boneless skinless chicken breast, cut into chunks
  • 2 cups fresh spinach
  • 1 1/2 cups sliced mushrooms
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • 2 tbsp flour
  • 1 1/2 cups milk
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the chicken chunks to the skillet and cook until browned, about 5-7 minutes.
  4. Stir in the garlic, mushrooms, and spinach, cooking until the spinach wilts.
  5. In another pan, melt the butter, then stir in the flour to create a roux.
  6. Gradually whisk in the milk and heavy cream, cooking until the mixture thickens.
  7. Combine the chicken mixture with the cream sauce and pour it into a baking dish.
  8. Bake in the oven for 20-25 minutes, until bubbly and golden.

Notes

Don’t overcook the chicken while browning, as it will continue cooking in the oven. You can substitute heavy cream with additional milk for a lower-calorie version.
