- 4 bone-in, skin-on chicken thighs
- 1 lb gnocchi
- 2 cups mushrooms, sliced
- 2 cups spinach
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- Salt & pepper to taste
- Fresh thyme, for garnish
Instructions
- Start by searing the chicken thighs in a skillet until they are crispy and golden brown. Remove them from the pan and set aside.
- In the same pan, add sliced mushrooms and minced garlic. Cook until the mushrooms are soft and fragrant.
- Pour in the heavy cream, chicken broth, and smoked paprika. Stir in the gnocchi and let it simmer until the gnocchi become tender.
- Mix in the spinach until it wilts, then place the seared chicken back in the skillet, spooning some sauce over the top.
- Allow everything to simmer until it is heated through. Garnish with fresh thyme before serving.
Notes
For added flavor, marinate chicken thighs in your favorite spices before cooking. Substitute chicken broth with vegetable broth for a different taste.
