Ingredients

- 1 lb (450g) boneless, skinless chicken breast or thighs, diced
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 small onion, finely chopped
- 2 cups broccoli florets (fresh or frozen)
- 3 1/2 cups chicken broth (or water + bouillon)
- 8 oz pasta (e.g. penne or rigatoni)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Optional: red pepper flakes for heat
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the minced garlic and chopped onion, sautéing until the onion is translucent.
- Stir in the broccoli florets and cook for 2-3 minutes.
- Add the chicken broth and bring to a simmer.
- Stir in the pasta and cook according to package instructions, until al dente.
- Once the pasta is cooked, lower the heat, and stir in the heavy cream and Parmesan cheese until creamy.
- Season with salt, pepper, and red pepper flakes if desired. Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm on the stove or in the microwave; add a splash of chicken broth or water if too dry.
