A delicious and easy one-pot meal featuring tender chicken, fresh broccoli, creamy pasta, and cheesy goodness, perfect for busy weeknights.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breast or thighs, diced
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 small onion, finely chopped
  • 2 cups broccoli florets (fresh or frozen)
  • 3 1/2 cups chicken broth (or water + bouillon)
  • 8 oz pasta (e.g. penne or rigatoni)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  2. Add the minced garlic and chopped onion, sautéing until the onion is translucent.
  3. Stir in the broccoli florets and cook for 2-3 minutes.
  4. Add the chicken broth and bring to a simmer.
  5. Stir in the pasta and cook according to package instructions, until al dente.
  6. Once the pasta is cooked, lower the heat, and stir in the heavy cream and Parmesan cheese until creamy.
  7. Season with salt, pepper, and red pepper flakes if desired. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm on the stove or in the microwave; add a splash of chicken broth or water if too dry.
