  • 1 medium onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 6 cups chicken broth
  • 1 cup uncooked wild rice blend
  • 2 cups cooked, shredded chicken
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat butter and olive oil over medium heat. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.
  2. Stir in garlic, thyme, salt, and pepper. Cook for another 1–2 minutes until fragrant.
  3. Pour in chicken broth and add the wild rice. Bring to a boil, then reduce heat to low. Cover and simmer for 40–45 minutes, until rice is tender.
  4. Stir in shredded chicken. If thickening is desired, whisk flour into cream before adding, then slowly stir into the soup. Simmer for another 5–10 minutes until creamy and heated through.
  5. Garnish with fresh parsley and serve hot.

Notes

Adjust the thickness of the soup by using more or less flour in the cream. For extra flavor, use homemade chicken broth if you can. Add other vegetables like peas or spinach for added nutrition.
