Ingredients

  • 1 lb cheese tortellini (fresh or frozen)
  • 1 lb ribeye steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup provolone cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the cheese tortellini according to the package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced ribeye steak and cook until browned and cooked through, about 3-5 minutes. Remove the steak from the skillet and set aside.
  3. In the same skillet, add the sliced onion, bell pepper, and minced garlic. Cook, stirring occasionally, for about 5 minutes or until the vegetables are tender.
  4. Reduce the heat to medium. Add the heavy cream to the skillet and stir in the provolone cheese and Parmesan cheese. Cook for 2-3 minutes, stirring continuously, until the cheese has melted and the sauce is smooth. Season with salt and pepper to taste.
  5. Add the cooked steak and tortellini to the skillet with the sauce. Gently toss everything together until well-coated in the creamy provolone sauce.
  6. Garnish with freshly chopped parsley and serve hot.

Notes

Serve in bowls topped with extra parsley. Pairs well with a simple side salad or garlic bread. For extra flavor, season the steak or add jalapeños for heat.
