- 1 lb cheese tortellini (fresh or frozen)
- 1 lb ribeye steak, thinly sliced
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 1 bell pepper, thinly sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup provolone cheese, shredded
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook the cheese tortellini according to the package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced ribeye steak and cook until browned and cooked through, about 3-5 minutes. Remove the steak from the skillet and set aside.
- In the same skillet, add the sliced onion, bell pepper, and minced garlic. Cook, stirring occasionally, for about 5 minutes or until the vegetables are tender.
- Reduce the heat to medium. Add the heavy cream to the skillet and stir in the provolone cheese and Parmesan cheese. Cook for 2-3 minutes, stirring continuously, until the cheese has melted and the sauce is smooth. Season with salt and pepper to taste.
- Add the cooked steak and tortellini to the skillet with the sauce. Gently toss everything together until well-coated in the creamy provolone sauce.
- Garnish with freshly chopped parsley and serve hot.
Notes
Serve in bowls topped with extra parsley. Pairs well with a simple side salad or garlic bread. For extra flavor, season the steak or add jalapeños for heat.
