- 2 large chicken breasts
- 1 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil (for chicken)
- 12 oz rigatoni or penne pasta
- 2 tbsp olive oil (for sauce)
- 1 small red onion, chopped
- 1 red bell pepper, chopped
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup diced tomatoes
- 1 tsp Cajun seasoning (for sauce)
- Salt and pepper to taste (for sauce)
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with Cajun seasoning, garlic powder, paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Cook the chicken for about 6-7 minutes per side until browned and cooked through. Let rest for 5 minutes, then slice into strips.
- Cook pasta according to package instructions. Drain and set aside.
- In the same skillet, heat olive oil. Add onions and bell pepper. Cook until softened. Add garlic and sauté for another minute. Pour in heavy cream and Parmesan cheese. Stir until smooth. Add diced tomatoes and Cajun seasoning. Season with salt and pepper. Simmer on low heat for 5 minutes until the sauce thickens.
- Add cooked pasta to the sauce and toss to coat evenly. Top with sliced chicken and sprinkle with fresh parsley. Serve hot and enjoy!
Notes
For added spice, increase the Cajun seasoning or add crushed red pepper flakes. You can substitute chicken with shrimp or sausage for different flavors.
