- 1 lb chicken breast, cut into chunks
- 1 tbsp olive oil
- 1 tbsp Cajun seasoning
- Salt & pepper to taste
- 8 oz linguine
- 2 tbsp butter
- 3 garlic cloves, minced
- 1/2 red bell pepper, diced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan
- 1/2 tsp smoked paprika (optional)
- Chopped fresh parsley, for garnish
Instructions
- Boil linguine according to package instructions. Drain and set aside.
- Toss chicken with Cajun seasoning, salt, and pepper. Sear in olive oil over medium-high heat until golden and cooked through. Remove and set aside.
- In the same pan, melt butter. Sauté garlic and bell pepper for 1–2 minutes. Add cream, broth, paprika, and bring to a simmer.
- Stir in Parmesan until melted and smooth.
- Add cooked linguine and chicken to the pan. Toss to coat in the sauce.
- Garnish with fresh parsley and serve hot.
Notes
Adjust the amount of Cajun seasoning to suit your spice tolerance. You can use shrimp instead of chicken for a seafood twist.
