Ingredients

  • 1 lb chicken breast, cut into chunks
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • Salt & pepper to taste
  • 8 oz linguine
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1/2 red bell pepper, diced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan
  • 1/2 tsp smoked paprika (optional)
  • Chopped fresh parsley, for garnish

Instructions

  1. Boil linguine according to package instructions. Drain and set aside.
  2. Toss chicken with Cajun seasoning, salt, and pepper. Sear in olive oil over medium-high heat until golden and cooked through. Remove and set aside.
  3. In the same pan, melt butter. Sauté garlic and bell pepper for 1–2 minutes. Add cream, broth, paprika, and bring to a simmer.
  4. Stir in Parmesan until melted and smooth.
  5. Add cooked linguine and chicken to the pan. Toss to coat in the sauce.
  6. Garnish with fresh parsley and serve hot.

Notes

Adjust the amount of Cajun seasoning to suit your spice tolerance. You can use shrimp instead of chicken for a seafood twist.
