  • 1 package gnocchi
  • 2 cups butternut squash, peeled and cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound sausage (Italian or your choice), casings removed
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh sage or parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Toss the cubed butternut squash with olive oil, salt, and pepper, and roast for 25-30 minutes or until tender.
  2. In a large skillet, heat some oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the sausage to the skillet, breaking it up as it cooks until browned.
  4. Meanwhile, cook the gnocchi according to package instructions.
  5. Once the butternut squash is done, blend it with the heavy cream until smooth.
  6. Combine the sausage mixture with the cooked gnocchi and pour the butternut squash sauce over it.
  7. Stir in the grated Parmesan cheese and mix everything well. Serve warm, garnished with fresh sage or parsley.

Notes

For a richer flavor, try using sage-infused olive oil. You can use half-and-half instead of heavy cream for a lighter dish. Feel free to add spinach or kale for extra greens.
