- 1 package gnocchi
- 2 cups butternut squash, peeled and cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound sausage (Italian or your choice), casings removed
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh sage or parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C). Toss the cubed butternut squash with olive oil, salt, and pepper, and roast for 25-30 minutes or until tender.
- In a large skillet, heat some oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the sausage to the skillet, breaking it up as it cooks until browned.
- Meanwhile, cook the gnocchi according to package instructions.
- Once the butternut squash is done, blend it with the heavy cream until smooth.
- Combine the sausage mixture with the cooked gnocchi and pour the butternut squash sauce over it.
- Stir in the grated Parmesan cheese and mix everything well. Serve warm, garnished with fresh sage or parsley.
Notes
For a richer flavor, try using sage-infused olive oil. You can use half-and-half instead of heavy cream for a lighter dish. Feel free to add spinach or kale for extra greens.
