Description

A delightful twist on the classic bacon, lettuce, and tomato sandwich, combining creamy goodness with fresh veggies and crispy bacon. Perfect for summer picnics and quick dinners.


Ingredients

  • 8 oz penne pasta
  • 6 slices bacon, cooked & crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped romaine lettuce
  • 1/4 cup sliced green onions
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1 tbsp white vinegar or lemon juice
  • Salt & pepper, to taste

Instructions

  1. Boil the penne until it is al dente. Drain and rinse under cold water to cool it down.
  2. In a small bowl, whisk together the mayonnaise, sour cream, vinegar, salt, and pepper until well combined.
  3. In a large bowl, toss the cooled pasta with the tomatoes, bacon, lettuce, and green onions. Pour the dressing over the top and mix gently to coat everything.
  4. Refrigerate the salad for 30 minutes before serving to help the flavors blend.

Notes

Adjust dressing ingredients to taste. You can add extra herbs or swap in different vegetables as desired.
