- 4 large eggs
Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the crust: In a medium bowl, combine graham cracker crumbs and sugar. Add melted butter and mix until moistened. Press the mixture into a 9-inch springform pan. Bake for 8-10 minutes, then let cool slightly.
- For the filling: In a large bowl, beat cream cheese until smooth. Gradually add sugar and mix well. Beat in vanilla extract and sour cream until combined.
- Add eggs one at a time on low speed. Pour the filling over the cooled crust.
- Bake for 60-75 minutes until the edges are set and the center is slightly wobbly.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove the cheesecake, cool on a wire rack, then refrigerate for at least 4 hours before serving.
