Ingredients

- 200g spaghetti or pasta of choice
- Salt for pasta water
- 2 ripe avocados
- 2 cloves garlic
- 2 tbsp fresh lemon juice
- 1/4 cup fresh basil leaves
- Salt and pepper to taste
- Cherry tomatoes (for roasting)
- Olive oil (for roasting)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss cherry tomatoes with olive oil, salt, and pepper, and roast for about 20 minutes.
- Cook the spaghetti in salted water according to package instructions.
- In a blender, combine avocados, garlic, lemon juice, basil, salt, and pepper until smooth.
- Drain the pasta and combine it with the avocado sauce.
- Add roasted tomatoes on top and serve.
Notes
Use ripe avocados for the best creaminess, and adjust garlic and lemon to taste.
