Description

A delightful pasta dish combining the rich flavors of avocados and the sweetness of roasted tomatoes.


Ingredients

  • 200g spaghetti or pasta of choice
  • Salt for pasta water
  • 2 ripe avocados
  • 2 cloves garlic
  • 2 tbsp fresh lemon juice
  • 1/4 cup fresh basil leaves
  • Salt and pepper to taste
  • Cherry tomatoes (for roasting)
  • Olive oil (for roasting)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss cherry tomatoes with olive oil, salt, and pepper, and roast for about 20 minutes.
  3. Cook the spaghetti in salted water according to package instructions.
  4. In a blender, combine avocados, garlic, lemon juice, basil, salt, and pepper until smooth.
  5. Drain the pasta and combine it with the avocado sauce.
  6. Add roasted tomatoes on top and serve.

Notes

Use ripe avocados for the best creaminess, and adjust garlic and lemon to taste.
