- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 6 cups chicken or beef broth
- 1 cup heavy cream
- 1/2 cup Alfredo sauce
- 8 lasagna noodles, broken into pieces
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 cup fresh spinach, roughly chopped
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the ground beef and cook until browned. Drain any excess fat.
- Stir in the diced onion and minced garlic, cooking until fragrant, about 2-3 minutes.
- Pour in the chicken or beef broth, heavy cream, and Alfredo sauce. Bring to a gentle boil.
- Reduce the heat to a simmer and add the broken lasagna noodles, Italian seasoning, paprika, salt, and pepper.
- Cook until the noodles are tender, stirring occasionally, about 12-15 minutes.
- Stir in the mozzarella and Parmesan cheeses until melted and creamy.
- Add the chopped spinach and cook for an additional 1-2 minutes, just until wilted.
- Serve hot, garnished with fresh parsley and extra Parmesan if desired.
Notes
This soup can be customized with various vegetables or proteins. Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
