- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 3/4 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup boiling water
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–4 tablespoons milk or cream
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt.
- In a separate medium bowl, whisk the buttermilk, vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Carefully stir in the boiling water until the batter is smooth.
- Divide the batter evenly between the two prepared cake pans.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- In a large bowl, beat the softened cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar, one cup at a time, beating well after each addition.
- Beat in the vanilla extract. Add milk or cream one tablespoon at a time until the desired consistency is reached.
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and pour over the chocolate chips in a heatproof bowl.
- Let it sit for 5 minutes, then whisk until smooth and glossy. Allow the ganache to cool slightly.
- Once the cakes are completely cool, place one layer on a serving plate. Spread the cream filling evenly over the first layer.
- Place the second cake layer on top of the filling and pour the ganache over the top.
- Refrigerate for at least 30 minutes to let the ganache set before serving.
Notes
Use room temperature ingredients for a smoother batter. Don’t skip the baking time for best results.
