A delicious chocolate cake layered with a creamy filling and topped with smooth ganache, perfect for any celebration.

- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 3/4 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup boiling water
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–4 tablespoons milk or cream
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt.
- In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract.
- Pour the wet mixture into the dry ingredients, and mix until just combined.
- Carefully stir in the boiling water. The batter will be thin, but that’s okay!
- Divide the batter evenly between the two prepared pans.
- Bake for 30-35 minutes, or until a wooden skewer comes out clean from the center.
- Let the cakes cool in the pans for about 10 minutes, then turn them onto a wire rack to cool completely.
- In a separate bowl, beat the softened cream cheese and butter until creamy.
- Gradually add the powdered sugar, mixing well after each addition.
- Add the vanilla extract and mix. If needed, add milk or cream one tablespoon at a time to reach the right consistency.
- For the ganache, heat the heavy cream in a small saucepan over medium heat until it begins to simmer.
- Remove from heat and pour it over the chocolate chips in a bowl. Let it sit for 5 minutes, then whisk until smooth.
- Let the ganache cool slightly before using.
- Once the cakes are cool, place one layer on a serving plate and spread the cream filling on top.
- Place the second layer on top and pour the ganache over the cake, letting it drip down the sides.
- Refrigerate for at least 30 minutes to set the ganache before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
