- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 4 ounces cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 1 cup crushed Doritos chips
- 2 eggs, beaten
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a baking dish with olive oil.
- Butterfly each chicken breast to create a pocket without cutting through.
- Season the inside of each chicken breast with salt and pepper.
- In a bowl, combine cream cheese, cheddar cheese, and crumbled bacon.
- Stuff each chicken breast with the cream cheese mixture and seal the edges.
- Dip each stuffed chicken breast into the beaten eggs, then coat with crushed Doritos chips.
- Place coated chicken breasts in the baking dish.
- Bake for 25-30 minutes, or until cooked through and golden.
- Let cool for a few minutes before serving.
Notes
For a unique twist, try using different flavors of Doritos or adding spicy seasoning to the cheese mixture.
