  • 5 tablespoons unsalted butter
  • 3 tablespoons heavy cream
  • Pinch of salt
  • 1 teaspoon orange or vanilla extract (optional)
  • 1/3 cup finely chopped dried cranberries
  • 1/3 cup finely chopped toasted pistachios
  • 1/2 cup powdered sugar

Instructions

  1. Prepare the Cream Mixture: In a small saucepan over low-medium heat, melt the butter and add the heavy cream. Stir to combine. Add a pinch of salt and the optional extract, then set aside.
  2. Melt the White Chocolate: Over a double boiler, melt the white chocolate, stirring gently until smooth. Remove from heat and gently stir in the cream mixture.
  3. Add Cranberries and Pistachios: Stir in the chopped cranberries and pistachios, cover the mixture, and let it sit at room temperature for 1 hour. Then, refrigerate for 2-3 hours until firm.
  4. Shape the Truffles: Once firm, scoop portions of the mixture and roll them into 1-inch balls. Roll the balls in powdered sugar to coat.
  5. Store and Enjoy: Keep the truffles in an airtight container in the fridge for up to 1 week.
