- 11 oz. white chocolate, chopped into small pieces
- 5 tablespoons unsalted butter
- 3 tablespoons heavy cream
- Pinch of salt
- 1 teaspoon orange or vanilla extract (optional)
- 1/3 cup finely chopped dried cranberries
- 1/3 cup finely chopped toasted pistachios
- 1/2 cup powdered sugar
Instructions
- Prepare the Cream Mixture: In a small saucepan over low-medium heat, melt the butter and add the heavy cream. Stir to combine. Add a pinch of salt and the optional extract, then set aside.
- Melt the White Chocolate: Over a double boiler, melt the white chocolate, stirring gently until smooth. Remove from heat and gently stir in the cream mixture.
- Add Cranberries and Pistachios: Stir in the chopped cranberries and pistachios, cover the mixture, and let it sit at room temperature for 1 hour. Then, refrigerate for 2-3 hours until firm.
- Shape the Truffles: Once firm, scoop portions of the mixture and roll them into 1-inch balls. Roll the balls in powdered sugar to coat.
- Store and Enjoy: Keep the truffles in an airtight container in the fridge for up to 1 week.
