  • 2 teaspoons cinnamon

  • 1/2 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 1 cup unsalted butter, room temperature
  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 3 large eggs, divided
  • 1 teaspoon vanilla extract
  • 3/4 cup molasses
  • 1 cup orange juice, no pulp
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tablespoon flour
  • Zest of 2 clementines
  • 2 clementines, peeled and sliced into rounds
  • 1 cup frozen cranberries, coarsely chopped
  • Powdered sugar for dusting (optional)

Instructions

  1. Grease a 9-inch springform pan and preheat the oven to 350°F (175°C).
  2. In a medium bowl, sift together flour, spices, salt, baking powder, and baking soda. Set aside.
  3. In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy. Add 2 eggs and vanilla, beating for 1 minute. Stir in molasses.
  4. Gradually add half the flour mixture to the butter mixture, followed by half of the orange juice. Repeat until just combined. Pour batter into the prepared pan.
  5. In a small bowl, mix the remaining egg, softened cream cheese, 1 tablespoon flour, 1/4 cup sugar, and citrus zest until smooth. Gently spread over the cake batter.
  6. Coarsely chop frozen cranberries and sprinkle over the cake. Arrange clementine slices on top.
  7. Bake for 50-60 minutes, until set. Test doneness with a pick—it should come out clean.
  8. Let the cake cool in the pan for 5 minutes, then release and cool for another 25 minutes. Dust with powdered sugar before serving.

Notes

Serve warm or at room temperature; pairs well with vanilla ice cream or whipped cream.
