- 3 cups all-purpose flour
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon allspice
- 1/4 teaspoon nutmeg
- 1 teaspoon baking powder
- 1 teaspoon baking soda

- 1 cup unsalted butter, room temperature
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 3 large eggs, divided
- 1 teaspoon vanilla extract
- 3/4 cup molasses
- 1 cup orange juice, no pulp
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tablespoon flour
- Zest of 2 clementines
- 2 clementines, peeled and sliced into rounds
- 1 cup frozen cranberries, coarsely chopped
- Powdered sugar for dusting (optional)
Instructions
- Grease a 9-inch springform pan and preheat the oven to 350°F (175°C).
- In a medium bowl, sift together flour, spices, salt, baking powder, and baking soda. Set aside.
- In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy. Add 2 eggs and vanilla, beating for 1 minute. Stir in molasses.
- Gradually add half the flour mixture to the butter mixture, followed by half of the orange juice. Repeat until just combined. Pour batter into the prepared pan.
- In a small bowl, mix the remaining egg, softened cream cheese, 1 tablespoon flour, 1/4 cup sugar, and citrus zest until smooth. Gently spread over the cake batter.
- Coarsely chop frozen cranberries and sprinkle over the cake. Arrange clementine slices on top.
- Bake for 50-60 minutes, until set. Test doneness with a pick—it should come out clean.
- Let the cake cool in the pan for 5 minutes, then release and cool for another 25 minutes. Dust with powdered sugar before serving.
