Delightful cupcakes combining the tartness of cranberries with the sweetness of white chocolate and the bright flavor of oranges.

- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- Zest of 1 orange
- 1/4 cup fresh orange juice
- 1/2 cup milk
- 3/4 cup white chocolate chips
- 1/2 cup dried cranberries
- For the Frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tbsp orange juice
- 1/4 cup melted white chocolate
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
- In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
- In another bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time to the butter mixture, mixing well after each addition. Then stir in the zest and juice of the orange.
- Gradually add the dry ingredients and milk alternately until just combined.
- Fold in the white chocolate chips and dried cranberries gently.
- Spoon the batter into the cupcake liners, filling each about two-thirds full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely.
- For the frosting, beat the softened butter, powdered sugar, orange juice, and melted white chocolate until smooth and creamy.
- Frost the cooled cupcakes and garnish with extra cranberries or white chocolate shavings. Enjoy!
Notes
Use fresh cranberries for more flavor and don’t overmix the batter for fluffy cupcakes.
