Delightful cupcakes combining the tartness of cranberries with the sweetness of white chocolate and the bright flavor of oranges.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • Zest of 1 orange
  • 1/4 cup fresh orange juice
  • 1/2 cup milk
  • 3/4 cup white chocolate chips
  • 1/2 cup dried cranberries
  • For the Frosting:
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp orange juice
  • 1/4 cup melted white chocolate

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
  2. In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In another bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time to the butter mixture, mixing well after each addition. Then stir in the zest and juice of the orange.
  5. Gradually add the dry ingredients and milk alternately until just combined.
  6. Fold in the white chocolate chips and dried cranberries gently.
  7. Spoon the batter into the cupcake liners, filling each about two-thirds full.
  8. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cupcakes to cool completely.
  10. For the frosting, beat the softened butter, powdered sugar, orange juice, and melted white chocolate until smooth and creamy.
  11. Frost the cooled cupcakes and garnish with extra cranberries or white chocolate shavings. Enjoy!

Notes

Use fresh cranberries for more flavor and don’t overmix the batter for fluffy cupcakes.
