Description

A delightful dessert combining creamy cheesecake with tangy cranberries and oranges, perfect for holidays and special occasions.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 2 cups fresh or frozen cranberries
  • 1/2 cup orange juice (freshly squeezed)
  • 1/2 cup granulated sugar
  • Zest of 1 orange

Instructions

  1. Preheat your oven to 325°F (160°C). Wrap the outside of a 9-inch springform pan with aluminum foil.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press this mixture into the bottom of the springform pan and bake for 10 minutes.
  3. Beat the cream cheese until smooth. Then, add in the sugar, eggs, vanilla extract, and orange zest. Pour this mixture over the crust.
  4. Bake the cheesecake in a water bath for 50-60 minutes. Turn off the oven and leave the cheesecake inside for 1 hour.
  5. In a saucepan, cook the cranberries, orange juice, and granulated sugar until the cranberries burst. Allow this mixture to cool.
  6. Spoon the cranberry topping over the cheesecake and refrigerate for at least 4 hours.
  7. Slice and serve chilled.

Notes

For best results, make sure cream cheese is at room temperature. Don’t skip the water bath to avoid cracking.
