Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 2 cups seafood stock
  • 1 cup heavy cream
  • 1 cup crab meat
  • 1 cup shrimp, peeled and deveined
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and celery, cooking until softened.
  2. Stir in the garlic and cook for another minute.
  3. Add the seafood stock and bring to a simmer.
  4. Reduce heat and stir in the heavy cream, crab meat, and shrimp. Cook until the shrimp is pink and cooked through.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped parsley.

Notes

For a thicker bisque, blend part of it before adding the shrimp and crab. Use homemade seafood stock for enhanced flavor.
